A Finland-inspired recipe from the Icelandic cake master. It’s a strange one with a kind of bread puddingy texture, but very quick and satisfying. Just be sure to serve it hot or warm not cold, and grease the dish before you bake!


For the Cake: 3-4 apples (about 400-500g chopped apple), 4 tbsp flour, 120g sugar, 1 large egg, 250g soured cream, pinch of salt

Preheat the oven to 180C. Peel, core and chop the apple small. Mix everything else well then add the apple and combine. Transfer this to a greased dish and bake for 40 minutes.

For the Topping: 50g flour, 30g light soft brown sugar, 20g icing sugar, 1/2 tsp cinnamon, 80g cold butter

Mix the dry ingredients then rub in the butter. Top the cake with this and bake for 10-15 minutes. Serve with whipped cream or creme fraiche.
